Old and Faithful

Chicken Italian (one of my husband's favorites)
8 boneless chicken breasts, cut into bite size pieces.
4 eggs
Fine bread crumbs
Pint of mushrooms
3/4 cup chicken broth
3/4 cup white wine
Muenster cheese
Marinate chicken in beaten eggs, drain and roll in bread crumbs and saute in margarine to light brown.
Place in a 9x13 casserole. Saute mushrooms and sprinkle over chicken. Combine broth and wine and pour on top. Top with slices of muenster cheese.
Bake at 350 uncovered for 30 minutes. - Freezes well and can be done ahead (nice for company)
Serves 8. I usually serve it on egg noodles.
Asian Meatballs with Sesame Lime Dipping Sauce
(This will satisfy any cravings to order chinese. Sooo good! Just mix everything in one bowl & bake)
1/4 cup whole milk
1/4 cup fine dry bread crumbs
1 1/2 lbs pound ground pork
1 large egg, lightly beaten
1/2 cup canned sliced water chestnuts, drained & chopped
1/2 teaspoon salt
1/2 cup chopped fresh cilantro
5 tablespoons soy sauce
4 teaspoons Asian sesame oil
2 tablespoons fresh lime juice
2 tablespoons water
2 teaspoons sugar
Accompaniment: steamed white rice
Put oven rack in middle position and preheat oven to 500°F.
Pour milk over bread crumbs in a large bowl and stir until liquid is absorbed. Add ground meat, egg, water chestnuts, salt, chopped cilantro, 1 tablespoon soy sauce, and 2 teaspoons oil and mix with your hands until combined well. Shape 3 tablespoons meat mixture into a ball and transfer to a 13- by 9-inch glass baking dish. Make more meatballs with remaining mixture, arranging meatballs about 1/2 inch apart in baking dish. Bake until cooked through, about 15 minutes.
Meanwhile, stir together lime juice, water, sugar, remaining 4 tablespoons soy sauce, and remaining 2 teaspoons oil in a bowl until sugar is dissolved.
Transfer meatballs to a serving dish. Stir sauce, then drizzle meatballs with 1 tablespoon sauce.
Serve meatballs with remaining sauce.
Gnocchi with Sausage and Spinach
Ingredients
2 9-ounce packages refrigerated gnocchi or one 17.5-ounce package shelf-stable gnocchi
1 tablespoon olive oil
1 medium yellow onion, finely chopped
1 pound Italian sausage, casings removed
1 clove garlic, finely chopped
1 5-ounce bag baby spinach
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
3/4 cup (3 ounces) grated Parmesan, plus more for garnishing
Directions
Cook the gnocchi according to the package directions, reserving 1/4 cup of the cooking liquid.
Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the sausage and cook, crumbling it with a spoon, until browned, 5 to 7 minutes. Add the garlic, spinach, salt, and pepper and cook, tossing frequently, until the spinach wilts, about 3 minutes. Add the drained gnocchi, the reserved cooking liquid, and the Parmesan and toss. Divide among individual bowls and sprinkle with additional Parmesan.
Tip: Gnocchi are small, quick-cooking dumplings, usually made from potatoes. You'll find them with the fresh or dried pasta in supermarkets,
Savory Chicken Squares
Ingredients
3 oz cream cheese (soft)
3 tablespoons butter (melted)
2 cups cooked cubed chicken
½ teaspoon salt
1/8 teaspoon pepper
2 tablespoons milk
1 tablespoon onion, chopped
8 oz can Pillsbury Cresent Rolls
¾ cup seasoned croutons, crushed
Directions
Preheat oven to 350 degrees. Combine cheese and 2 tablespoons butter (reserve 1 tablespoon). Add chicken, salt, pepper, milk & onion, then mix. Separate dough into 4 rectangles on pan. Press seam together to seal. Spoon ½ cup chicken mixture into center of each rectangle. Pull the four corners of each rectangle to center, twist & seal. Brush tops with butter then top with crumbs. Bake for 20-25 minutes.
